Black Sheep Progress

Hi Guys,

I was up at the Black Sheep brewery in Masham last weekend and tried quite a few of their brews, most of which I'm overly familiar with already :oops: They have a new brew out called Progress for their 20th year anniversery and is made with only progress hops, I'd love to have a stab at recreating it as it really can't be too hard but I was wondering what yeast to use. I normally use a Safale S-04 but wondered if anyone knows what would be closer to the Black Sheep yeast.

Hi!

The yeast closest (or an actual match)is repurted to be White LAbs WLP 037 - Yorkshire Sqaure Ale yeast.
I've never used it myself but I have used Wyeast 1469 - West Yorkshire yeast which is reputed to be the Timothy Taylor yeast.

Either of those would give you a nice beer.

Makes perfect sense, they do use Yorkshire squares slate fermenters :) I'll get some ordered!!

According the their web site,it's all Marris Otter malt and Progress hops, 4% alc.

The stuff inthe bottle is 10% :D:D shouldn't be too hard, did it smell of hops? if not probably no dry hopping, so then its just a case of getting the IBU's right if its just a smash recipe.

Not overly hoppy on the nose really, might stick a cone or 2 in though.

At 10% are you refering to the Imperial Stout they do? It was 8.5 and I bought a few bottles back. They're stopping making it next month and the brewer said they won't be making another batch again. They tried to justify the £3.20 for a 330ml bottle on the price of sugar too, very odd!

I should hav ementioned that WLP037 is a limited release yeast - not sure what tiem of eyar its avaialble - you could try the malt miller...

The stuff in the keg is 4% the stuff in the bottle is 10% unless i read it wrong?

I was up at Black Sheep brewery today.

One thing I noted was their use of chalk paint for the stainless fermenters. At the kreusen ring level they paint the fermenter with chalk paste.

This apparently stops the dried kreusen ring from sticking like mad to the steel. I think I might try that. Need to be accurate with the level though else your beer's acidity will be neutralised.

It's available November/December. I've had from Brew UK and Hop & Grape.

Did you end up brewing this? If so, how did it turn out? Did you like it, and was it similar to the Black Sheep Progress you enjoyed?
