Hello
After a bit of a shot in the dark, I've had a moment of clarity after finding a packet of dried elderflowers in the fridge. I think I've found my Canarian Christmas beer. Not very Canarian, but it'll be light and summery which is what I'm after.
Question is, what do I do with them? In the boil? Secondary? I was thinking of adding them after fermentation had settled down a bit and let them steep for a week. Would that be enough?
Also, how about hops? Do they replace them or compliment them? I bought them with some EKG in mind, but they got caught up in a freezer de-frost catastrophe. I've got Progress, Brewer's Gold and Nelson Sauvin. I'm thinking the latter two would only fight for attention and may not be worth combining with the flowers. Thought I might steep a few Progress after the boil then add the elderflowers later.
It's only for 7l, and the bloke who sold them to me reckoned 15g should be enough. Anybody got any experience with them?

Elderflower is a great ingredient as far I'm concerned.

I've brewed with it a lot and my "Father's Favourite" in which it features heavily always (and I mean always) wins all the blind taste testing of my brews even if I throw the odd commercial beer in the mix.

I use a blend of Fuggles for bittering and EKG at flameout for aroma. Half the Elderflower goes in the boil and the rest in the steep. Fermenting it might over power the flavour but I've never tried it.

As for quantity, 15g for 7 litre will be enough to base line it for you.

I use these in my Badgers Golden Glory clone.

I add 15g at 15 minutes. Gives a nice flavour.

Thanks chaps.
I'll give them a bash with some Prgress hops, I reckon. I think the other hops bring too much to the table to mix them with flowers.
I've never tried either elderflowers or Progress hops before so I reckon I'll put them both in some hot water and see how they taste. I could even blend the 'teas' and get a taste of the mix.
