OK... I added 1KG of Rowse honey today. Took a sample and didn't get any honey flavour. I suppose there was always going to be little chance of a honey hit as it's so delicate. Perhaps i got too caught up in the desired/ideal result of this beer and didn't really think about it realistically. Of course those roasts and smokiness were going to thwart any hope of the honey making an appearance; even if I did add 1KG. Sure, it's early days but if I can't taste it before it ferments, I doubt it will be detectable after it ferments out.
SO! I pretty much added 1KG of sugar to this brew. DOH! I could take a chance and add more honey. Nah...
Ah well... if we don't experiment, we'll never know and who knows? It could be my greatest beer yet!

Nice thread Floyd, sounds good so far and really nice pics. Deffo get a sparkler, although it's not Southern and frowned on south of the Watford Gap, they are good things. I'm northern (Grimmmmmmsby) and have to abide by these things.

Right. This is sitting at 1.012 and tasting mighty fine. I'm pretty sure I'm getting honey hit too! 
Really happy with this yeast. 1kg of honey and it's still sitting at 1.012. Brilliant. Hope it doesn't drop any more.
On the downside though... not getting much smokiness any more. Maybe it will reappear when the beer's matured.

So... some time later...
This beer turned out excellent. The honey is there in flavour and in texture. You can really get that honey flavour clinging to your tongue. The smoke is there too - delicately. Everyone who tried it got both the smoke and the honey.
All in all, this was a success... and there was me worrying as usual...
