1 gallon of apricots on 1kg of apricots? Man, that's ALOT! Brilliant! I reckon it might really thin it out though... You'll get big apricot flavours in that one. Can't wait for the tasting notes when you try it! :-)

Yea I think I may of mixed up the fruit to beer ratio on that one. It wasn't until I looked at the amount of space the fruit took up after I'd put the beer onto it that I realised it looked rather alot. Or I may of split it into two!
I did mash quite high to try and get more body in the beer thinking the fruit would then thin in out. So will see what happens! the apricot one is also the one I cant wait to try.

I knew it... rather than ooze out of the top like I had hoped.... The blackberries seemed to of clogged the neck of the demijohn until the exploded out of the top, coating EVERYTHING inside my fermchamber with juice. Lovely thing to clean up when getting in from a night at work!

Also, I havent airlocked these, just folded sanatised foil over the top of them all. Now the blackberries and apricots im hoping have enough sugar to ferment and [ut a blanket of CO2 on top, but what about the root ginger?

Am I being too paranoid about sanitation?

I think foil is fine as I reckon there will still be plenty of co2 pumping out... although it's a bit crap that you lost some fruit. Good ting you over catered in the first place! :-)

The blackberry and apricot are still bubbling upo the side of the demijons... I havent got round to bottling anything yet! I meant to bottle thsi weekend, but found my larger autosyphon doesnt fit in the demijons!

That's good. Delay as long as you can stand. True fruit lambics age on the fruit for a year. I can't wait to hear how these turn out.
