SNPA, Cascade run out

Post by Chris Tel » Wed Oct 17, 2012 5:41 pm

My favourite brew which I was hoping to get on tonight is MaltMillers SNPA. Unfortunately, just noticed that I'm about 30g short of Cascade. The only other hops I have are Northern Brewer (which I use as the bittering hop in this recipe) and Saaz. Should I substitute with 30g of Saaz? Shoudl say that I normally use 100g in the last few mins of ther brew. Or shall I just leave as is? Any advice most welcome!

i'd be tempted to blend in a few northern brewer (if you have extra) to the late hops, just to mix it up a bit. but 70g cascade is still a decent whack for late additions, so you could make sure the flavour additions are sorted, then get some more for dryhopping later if you want to dial it up a bit..
dazzled, doused in gin..

I would leave the northern brewer and Saaz out, they arn't great substitutions for Cascade.

Northern Brewer is the bittering hop used very successfully in the clones though

Exactly. It's true Northern Brewer is no substitute for Cascade, but it's also true that it's commonly used alongside Cascade in many of the original beers you're talking about. The nearby Anchor Steam is considered similar to and just as influential as Sierra Nevada Pale Ale in igniting the American Craft Beer Revolution, and it uses entirely Northern Brewer hops (I'm pretty sure.) So if you must substitute some Northern Brewer for Cascade in order to hit your target bitterness and aroma levels, it will still be true-to-style.

It's a matter of taste, of course, but I much prefer the woodsy and minty profile to pure grapefruitiness anyway...
