Hopefully making 40 lts of this on Sunday.
Its a slightly teaked version of Swoonara's (Paul's) recipe that won the Thornbridge Homebrew COmpetition last year.
Never used Apollo before so should be intersting, also its using my new large boiler and heat exchanger.

A baptism of fire!!!

Paul had a lot of great feedback from this recipe so fingers crossed I do too!

Gyle Number: 41

Fermentable Colour Grams Ratio
Pale Malt 6 EBC 6000 grams 82.2%
Munich Malt 20 EBC 1000 grams 13.7%

Well this is all done and dusted. Not sure how much I've ended up with as I have a new 60 Lt FV and I haven't got any way of measuring volume in it yet.

I was aiming for around 1042 and I think I've got something like 1046 at around 42 Lt's so all in all my new boiler and heat exchanger have done well.

Im fermenting this with 1318 London Ale III as it was hanging around waiting to be used, should be interesting.

I've added 30g of Columbus in a hop bag to the FV.

Ill probably just bottle this straight from FV after leaving it for a couple of weeks. Its in the garage and with these ambient temperatures it may take a while to get all the way down to 1009.

Sounds good! Brewing a redish ale using Apollo in a few weeks time. Can't wait!

Hmmm well as usual things have not gone according to plan. The beer is still in my 60lt fermenter in the garage.

Thanks to the UK turn in weather fermentation ground to a halt at 1020° so I had to invest in a immersion heater from fleabay.

This took a couple of days to arrive but since having this it has painfully got down to about 1012°.....

I think I was after about 1009° but you know what? Im getting fed up of waiting! I might just fine it and bottle it very soon.

My only worry is that an infection may be lurking, ive done a couple of micro checks and i saw a couple of small short rods but since taking more samples ive not seen anything else lurking.

On top of this ill never be using 1319 yeast again. It needs its hand holding too much, rousing, perfect temp etc etc. Ive never had this much trouble with a live yeast before. WLP007 is ace, it never needed any kick up the bum.

I did something similar and Im drinking it now. Apollo and Summit with a little Citra to round it up. WLP007 is nice and balances out the hops without much of that harshness if u dry hop alot. Do a diacetyl rest to make it cleaner.

Its pretty fruity late in the boil but as a dry hop, it DANK!!! Lovely hop, clean as a bittering hop as well.

You have never fermented in a garage before with all the changing temps!!!

Indeed true Simon. I meant 1318 not 1319. Still a rubbish yeast!
