I just thought I'd pop back in here and say WOW! I'm still amazed just how good this stuff is.

If you're thinking of doing it, get it done and get "amongst it".

Just kegged my stuff tonight, will give it a few days and see how it turned out.

You may use my wife's example ditch finished bottling at 5pm and by 10 pm she was drinking it

Got to say I was impressed. I had some hydrogen sulfide off the initial fermentation but pressuring and purging the keg a few times and it tastes excellent.

Wife bought some lovely brisket steak today, gonna get some kidneys tommorow and make a ditch's steak n kidney pie me thinks

well I put my brew on in page 46 and through my own fault it was not to Ditch's recipe (beer enhancer and white sugar i used) but, I must say I was pleasantly surprised and it was quite drinkable, deffo got alcohol in it,lol. have only got a few litres left now. I have now went and got the correct ingredients.... and just put the first Ditch brew on and I've splashed out and got a basic youngs keg to dispense it from (long overdue). I look forward to trying the correct one in the near future.

Ok - just bunged my virgin batch of ditches stout on - bring it on.

The current wife said "Isn't that the one that explodes everywhere?". I replied yes and asked her for a bin bag (note: I don't know where they are). She said it didn't matter, let it rip.

Have ye got a heater in it, mate? Because, seriously; Bang it out at 21 C or so and ye bloody well need some protection! I know it's good craic and all that. But, having ye flooring soaked in beer? Not funny!
