Dark Mild recipies?

Post by Scotty » Wed Nov 14, 2012 9:54 am

Hello chaps,

I'm on the hunt for a dark mild recipie to brew either this week or next to have ready for Christmas. I'm aiming for somewhere between 3.5-4% ABV. Since moving, I haven't been able to find my copy of BYOBRA so it's up to you guys to deliver the goods 8)

sounding good orlando. As luck would have it, I have a little bit of carafa III left and I was planning on chucking it in for a body boost.

I brewed this a couple of weeks ago, its good drinking even now. Tastes like the milk left over from a bowl of chocolate oat rings. :).

I will be doing this again in time for Christmas as this batch will never last. I will up the oats by 50% and the black by 25%

Amt Name Type # %/IBU
2.75 kg Fawcetts Mild Ale Malt (7.0 EBC) Grain 1 68.4 %
0.40 kg Fawcetts Pale Crystal (60.0 EBC) Grain 2 9.9 %
0.24 kg Barley, Torrefied (3.3 EBC) Grain 3 6.0 %
0.08 kg Black (Patent) Malt (985.0 EBC) Grain 4 2.0 %
0.05 kg Golden Toasted Oats (10.0 EBC) Grain 5 1.2 %
35.00 g Fuggles [4.50 %] - First Wort 60.0 min Hop 6 18.5 IBUs
0.50 kg Maltose syrup (5.9 EBC) Sugar 7 12.4 %
1.0 pkg ALE 514 (Mauribrew #) Yeast 8 -

Just checked Weyermans site and noticed that the Carafa 3 is the heaviest roast 1300-1500 EBC so this will certainly boost your colour but might be a little harsh so think about reducing to say 50-60g or you could steep the grains and add into the boiler near the end of the boil or you could just up the chocolate and leave it out. Brewing software will help you decide.

I made a fantastic dark mild last year with a historic receipe from Ronald Patterson's Shut Up About Barclay Perkins website. Here is the link:

I would suggest you try it sometime!

There is a selection of Wheeler milds on the Worcestor Hop Shop site. I recommend the Hop Back mild.
