First attempt at Cider

I'm just trying a first attempt at cider, if anyone spots any glaring errors please point them out.
I have had a lot of windfall apples, all eaters, I have gathered just over a bucket and a half, washed and chopped them as fine as I could, some I grated. I also added some windfall cookers, put the whole lot in an old coolbox with some water, a dab of camdem, a tsp of pectolase put the lid on loosely and let it sit for 5 days.
last night I added a sachet of Coopers yeast that I had lying around. this morning it is fermenting and I added some more grated windfalls that fell over the last few days.
I am planning on letting it ferment for a few days then rigging up a homemade press using net curtain, a bottling bucket, another bucket that fits inside it and some bricks.
Around this time I plan on adding a sugar solution and possibly some water but I don't want it watery. (possibly add more tannin or even some ginger)
Hopefully it shall be worthwhile as I have loads of windfalls every year.
Any thoughts or observations?

Be very careful pressing fermented juice and adding extra apples, you can get an infection very easily once the yeast has started. You would have been better off sorting your juice fully before adding the yeast, just a thought mate, you never know you may have discovered a new way of making cider.

I have started to strain the apples, I lined my bottling bucket with net curtain, added the apple mix, popped a bucket underneath, opened the tap and let it pour. Now the initial rush has slowed I put a smaller bucket inside the bottling bucket and weighted it with bricks. (I'm not buying a press for an experiment)
It looks like I'll get 3 Gallons of juice, tastes ok, quite appley. I'm not sure how much sugar to add, possibly dissolve 1lb and take readings, take it from there.

sorry but your method seems a little strange to say the least.
why not simply grate /shred your apples, stick the pulp in the press and then put the juice in a fermenting vessel with an airlock.
er thats really about it, no added water,sugar,yeast tablets, just pure juice and leave the natural yeasts to do their magic.
