+1 what he said. Looks delicious!

...except I'd add-in a handful of the black malt for some red colour and a subtle toasty note, as well as a handful of quick oats from your kitchen for a creamier mouthfeel, head retention and lace. Keep us posted!

That's true (in every sense) :) ...but the OP listed his remaining brewing supplies. Mckelvie20 must not have torrified wheat, but I bet he has some kind of oatmeal in the kitchen. Oats are a cheap and easy way to upgrade any recipe in my opinion.

With those ingredients you can brew any number of classic English ales, pretty much as barney suggested. You could up the crystal a bit. Black will give a deeper colour (but don't over do it). And Fuggles and Goldings. Perfick! I'll be round in a few weeks to sample it.

That recipe leads me to the question in my quest to learn to home brew dry hopping ? do you just pop them into the fermentor do they just sink then i siphon off the beer on top?

I put them in the fermentor but only when the fermentation is finished and then only for a couple of days (tip from an American hop grower) I have used them loose (probably best) in a hop bag and a big stainless steel tea ball infuser. If you do them loose they can be a bit of a pain when you come to rack off. A tip I was given is to sanitise a piece of muslin or a hop bag and tie this on to your syphon. Using just the tap is asking it to be blocked so the other methods would then become more favourable.

Looks nice, what is TV3 like?

I've only used TV2 and found it quite low in esters especially after a few re-pitches.

TV3 Is reportedly a similar strain to fullers yeast. I find It is quite fruity and soft yet enhances the malts.

This weekend I will be putting that theory to the test. I have plated a sample from a bottle of Bengal Lancer, I was surprised how little yeast there was and about the other strange things that grew, and cultured a starter from a colony.

Both are now sat in 300ml starters waiting for the next step up. I will pitch them both into an identical split wort and then see which is best. :)

Interesting comment. brewed with a cultured up sample from 4 bottles of Bengal Lancer and got a lot of yeast once I had stepped up (100ml, 500ml, 1,500ml). Being lazy I didn't do a cell count but figured there was plenty to get the job done. It took off really well and decided to top crop it. It very quickly attenuated and rather low at that (1.018). Surprisingly it tasted a lot drier than that would suggest but I was wondering whether the top cropping was the problem, taking too much, any thoughts?

I am particularly intrigued by your comment about "the other strange things that grew", any further comments on that?

Hello Orlando, I managed to grow two other things. I wish I had photographed them now and looked at them under the microscope.
One was a big white snowflake type set up with long white spikes in all directions up to an inch long. The other was a small flat red wrinkled thing which was about the size of a small pea.

The Yeast colonies have grown up fine and have just been pitched into 25ltr of a Bengal Lancer clone. :)
