A little update on day 11.
I have racked this brew into a clean 15L FV and also checked the gravity and it's down to 1.022. I wouldn't think that it will drop anymore now, but you never know!
I will check the gravity again at the weekend with a view to bottling early next week. It is still tasting rather nice, but I think adding any hops was now an obvious waste, because they are totally lost in this stout.
Anyway an 8.5% stout should be great by winter 2012

Sounds really good mate!
Is the stout over powering the hops altogether? Sounds a super brew though and you will be on your arse!!

Yeah, the liquorice stout flavours are pretty full on
It doesn't taste quite as sweet as the first taste which is good.

I have checked the gravity again today and it's still 1.022, so I will be bottling tomorrow night.
I am not sure how I am going to leave this brew alone until Christmas, because the trial jar sample tasted so damn good. Liquorice, sweetness, mild roastyness, slight bitterness, then alcoholic warmth!

I have moved this brew into my garage this evening after 10 days in the warm, and couldn't help but try one of the half pint taster bottles.
It is still very good, if not a bit too sweet again, but I am sure that this will fade with time. It is well carbonated already, and gave a nice pfftt when I popped the cap off.
The head is strangely tight too, and lasted to the end

I tried a pint (dunno why I bottled it in pint bottles, lol!) bottle of this brew tonight some 7 months after bottling it.
The aroma is liquorice and so is the taste.the high alcohol taste is masked by dark malt flavours and it has a strong dry bitterness that needs to mellow alot more IMO. The mouthfeel is full and very smooth and the head is very dense an creamy and just won't dissapear.
At 8.5% ABV, this brew carries a mighty punch and in true RIS style, probably needs another 6-12 months of conditioning.
A wasted MB!

im going to try this as my next years Christmas brew. ill make it early January so it has plenty time in the bottle.

Do you need two packets of yeast for this? silly question how you get 2 packs of the coopers yeast .Or can i substitute with another yeast

I only used 2 because I had a spare from a previous Coopers kit that I'd brewed with a different yeast.
You should be ok with 1 sachet as long as it's well in date.
Who's to say how well it's been stored before it got to you, but Coopers yeast is normally very viable.
