Hi guys this is my first attempt at an American Pale Ale:

American - Pale Ale

Date: 19 Dec 12

Yeast Type: American Ale Yeast WLP 60

Fermentable Colour lb: oz Grams Ratio

Pale Malt 5 EBC 8 lbs. 2.5 oz 3700 grams 88.1%
Carapils Malt 4 EBC 0 lbs. 8.8 oz 250 grams 6%
Pale Crystal Malt 60 EBC 0 lbs. 8.8 oz 250 grams 6%

Hop Variety Type Alpha Time lb: oz grams Ratio
Centennial Whole 13.5 % 60 mins 0 lbs. 0.4 oz 10 grams 9.1%
Cascade Whole 5.7 % 60 mins 0 lbs. 0.4 oz 10 grams 9.1%
Centennial Whole 13.5 % 10 mins 0 lbs. 0.9 oz 25 grams 22.7%
Cascade Whole 5.7 % 10 mins 0 lbs. 0.9 oz 25 grams 22.7%
Centennial Whole 13.5 % 0 mins 0 lbs. 0.7 oz 20 grams 18.2%

Let me know what you think, its ok....i'm not very good and have only been brewing since May 12......so every brew is a learning brew......

It ticks all the BJCP boxes and uses perfectly true-to-style ingredients, so I'd say you've crafted an excellent base-line recipe there. Very nice yeast choice. Well done.

Thanks mate....I'm hoping so. I made an 1.5ltr starter couple of days before using the WLP 060 American Ale Yeast - Its going off like the clappers now, and has a lovely large creamy head on top......

I'm thinking of dry hopping with 50g of Centennial do you think that'll be ok??

One of the best, for this style at least. There's a reason people refer to Centennial as "Super-Cascade." If you want immediately recognizable American hops aspects--grapefruit and pine resin--then Cascade and Centennial are the most obvious go-to options.

Do be sure to include at least 100 ppm sulfate (I prefer 300) in the water and keep the alkalinity low. That recipe looks fine.

I just finished off a similarly hopped IPA that focuses on Cascade and Centennial. Its a good combination.

I did thank you. I was going originally go for the 3 C's.........Cluster, Cascade and Centennial.....but i'll be honest......i thought the Cluster smelt like Cats P1ss a tad and was worried about that coming through....Could i ask your thoughts??

And if it's pine resin that you are after then Chinook and Simcoe are two of the best choices for hops.

Now to address the 2-ton gorilla in the room: why is a revered English brewery and guild wasting their time on an American Pale Ale contest? No judgment, just a bit bewildered. I guess the grass is always greener on the other side. :)
