
With such a high FG I don't want to mash really high in order to get the body and risk ending up too sweet so have added a few oats with the intention of mashing at 67º. The Alice Porter recipe I was given uses Sorachi Ace as a late hop but after a bit of research, I can't see it working in the quantities suggested (and I can't justify the price either) so am taking a citrus hit from a late stella addition. Intending to Ferment with S04. Hopefully getting this on over the weekend.
