NZ IPA - Critique?

Hi there,

Got some lovely looking Kohatu and NZ Cascade and looking to brew a full out IPA but particularly want to show the character of the Kohatu. Plugged this into Hopville:

Volume - 14L
OG 1.070
FG 1.017
60 min boil
Safale US-05

88% 4.0kg English Maris Otter
11% 0.5kg Wheat Malt
1% 0.05kg Thomas Fawcett Caramalt

boil 20 min 20 New Zealand Pacific Jade ~ pellet 14.2% » 27.6
boil 10 min 10 New Zealand Cascade ~ pellet 7.5 » 4.4

boil 5 min 10 Kohatu ~ pellet 5.7 » 1.8

Am tempted to add another 100g of NZ Cascade towards the end/dry hopping as have another bag but would like to bring some of the Kohatu out. Was also considering using all the NZ Cascade as 5 min/post boil and dry hopping with 100g Kohatu.

I would trade in the wheat malt for some light Munich and the Caramalt for some medium crystal and I would put some of those lovely hops into a 1st wort hopping. But those are just what my preferences would be, after all the beer is yours :beer:

When I was in NZ recently, I was surprised to learn that NZ IPA wasn't pale at all (although the British and US IPA brews generally were). So for authenticity it should probably be the colour of a light brown ale. Oh, and quite sweet.

Call it what I want in an IPA anyway - NZ hops with not much sweetness, definitely looking for something on the lighter side (colour that is).

Thoughts on the hopping schedule?
