First all grain brew recipe

My brew build should be finally ready soon and my mind is turning to thinking about a first recipe for a 5 gal batch. My ideal beer is a malty pint full of flavour with a good head. The sort of beer I do not like is a one that is all about the hops and has no head, and unfortunately I find this describes a lot of english ales! I know a lot of people like this type of beer, but its not for me as I do not think they are well balanced. I like a beer that goes down easily. Conversely, I am a fan of stout and I know this is the highest on the bitterness scale, but for some reason it seems right when combined with the other stout flavours. I also like Newcastle Brown. Having worked on building sites in Munich for five years, the Helles type of beer is my favourite lager and am also partial to a dark weissbier. Obviously, I do not wish to be too ambitious with my first brew. I would rather try a beer someone has actually brewed and that fits with my personal preferences. Any suggestions guys? Thanks for any help!

easy... brew Newcastle Brown.. seems to fit the bill...
