My town crier clone has been gurgling away in the kitchen now for a week, i was wondering how long a beer can keep for in the first fermentation stage before it starts going off? especially in the warm weather!
I plan to rack it off into another fermenting bin,to clear before transfering to my corni keg, how long should i leave it to clear (i'm using finings)

How Long?
i usually leave mine for 10 days to ensure its fully done, if the sg is the same for two days running then its ready to rack but i just leave it for 10 days then move it yours is unlikley to go any lower at 1010. if youre then putting it into secondary in a barrel it will be safe under a blanket of co2 so can stay there for another 10 days or so then rack off into your corni . Daab gave me a demonstration of an air free transfer which should be on a thread somewhere if you cant find it it is also on my blog .

You can leave the beer in primary for several weeks before anything starts to go wrong with it (providing sanitation is good obviously). I have left beer on primary for about 5 weeks without any noticeable effects. The biggest problem was that most of the yeast fell out of suspension and it is very slow to carbonate.

Autolysis, but I thought it could take months to happen?
