Are the 2 zero min Amarillo additions cold steep & dry hop?

Simcoe and Amarillo go really well together - if you have any more Simcoe I'd chuck some in dry too :wink:

Bitterness is on the high side for that ABV in my mind. Obviously the recipe will come out differently in your kit than it will in mine, so best to judge against other brews you've done.

Have you brewed anything similar before?

I made a very similar brew lately which is sitting in line waiting for an empty tap. I bitter with Warrior then use the Amarillo and Simcoe late and of course dry hop as well. I didn't use any crystal at all, just a bit of amber malt for character. That should make the beer pretty dry and if anything accentuate the hops more, we'll see. I would also like to fool around with Citra a bit. This summer I'll make an American Wheat beer but hop burst with Simcoe, Amarillo and perhaps some Citra. I did a similar beer last summer and it worked out really well. Generally, I think American wheat beers are pretty pedestrian however if you hop burst them they get interesting. :D
Drinking:Saison (in bottles), Belgian Dubbel (in bottles), Oud Bruin (in bottles), Olde Ale (in bottles),
Abbey Triple (in bottles), Munich Helles, Best Bitter (TT Landlord clone), English IPA
Conditioning: Traditional bock bier, CAP
Fermenting: Munich Dunkel
Next up: Bitter (London Pride like), ESB
So many beers to make, so little time (and cold storage space)

Ive done a few apa's, most successful was a single hop (apollo) brew I named Saturn V, its on here under that name, will be making it again for the summer

I could drop some of the simcoe and throw it in late to reduce bitterness?

Just taken a look at Saturn V. 90 IBUs at 5.5% and a FG of 1.013.

That's not something I would have made, so probably best to trust your own judgement rather than mine commenting on your recipe!
