My latest pale ale is tasting magic, thought I'd share the recipe...
Five 'ops
Maris otter 5.1kg
Munich malt 500g
Wheat malt 250g
Crystal (60EBC) 150g
Hop mix (all mixed up in a large bowl):
Chinook (13.85%) 52g
Simcoe (15%) 60g
Cascade (7.9%) 50g
Centennial (11.5%) 30g
Schedule:
30g hop mix as FWH
20g at 60mins
20g at 20mins
30g at 10mins
40g at 5mins
50g at flameout
40g mosaic pellets dry hop for 5days
Mashed at 69deg for 60mins
WLP007 in 1200ml starter
OG 1054. FG 1012
24l batch size
Fermented at 19.5 deg for first 2 days then slowly ramp up 21.5 deg.
Crash cool to 4deg after dry hop.
80g priming sugar bottles.

at a mash of 69c, does it taste sweet and heavy?

No not at all, could be my thermometer however as I do trend to struggle to stay above 1010. Unless I mash high. That batch finished at 1012 so you may need to adjust the mash temp to suit your kit /water.
I brewed using this hopmix method again on sunday. slightly different grain bill and similar but different hops:
Grains mashed at 69 deg:
MO 4.1kg
Munich 240g
Crystal (ebc 150) 250g
Wheat malt 300g
Hop mix:
Cascade 50g
Centennial 60g
Simcoe 33g
Columbus 50g
Schedule:
40g as FWH
20g at 60mins
30g at 20mins
30g at 10mins
40g at 5 mins
50g at flame out with 30min steep.
OG was 1045
Big slug of s-04 from a previous batch washed and kept in fridge for a month.
This is slowing down and at 1015 today. It's tasting superb.
