Fuller's Discovery and ESB

Post by Matt12398 » Mon Apr 08, 2013 6:44 pm

I know this is in the wrong place but the Brewing Liquor forum isn't very busy these days and I've struggled to get an answer.

For anyone that's into water treatment I wondered what water profile I should aim for for Fuller's Discovery. I gather that Fuller's treat their water and don't use straight London water so wondered if anyone knew what the target profile should be. I have the Bru'n Water spreadsheet so if anyone has it and knows the best corresponding profile that would be even better.

I'm also doing a Fuller's ESB before and will re-use the yeast so wondered if anyone had any idea what water additions should be used for ESB as well. Being a bit darker I wondered if they would treat the water differently.

Not sure if this will help, but I read an article recently with an interview with the Fuller's head brewer in which they stated that Fullers burtonize their water. Unfortunately I can't find the article now, and I've no idea if that's true.

I have heard that to be true as well. I was hoping to get a profile with target ppm for specific ions. It doesn't have to exactly match Fuller's but something that gives the same ballpark.

They add gypsum to their brewing water, for both Discovery and ESB.

I went to a Fullers brewer trip last week and the tour guide confirmed they use London water supply and burtonise it

Thanks Ron and Sean. So would you burtonise to the level you'd expect for an IPA?
