Is it possible to make some sort of beer with chillis i wonder. Not hot but more sweet chilli?
I know from experience chillis in vodka releases the capsicum. Perhaps boiling some very mild chillis in some water and adding to the brew?

Less bittering hops for the sweetness, then just steep the chillies in the secondary (or primary), perhaps boiling them in a little water.Hoppkins wrote:I have a bunch of medium hot dried chillis i could use i grew myself.
I would really want the beer to be nice and sweet. Whats the best way to achieve a sweet beer.

Last year I ended up with 3 kilos of Jalapenos plus a load of other varieties. This year, so far not had too much luck with the Jala's but in total I think we planted something close to 100 chilli and sweet peppers so hopefully I will have plenty come the end of the season

I made chilli wine last year, never again, good for cooking but not for drinking.
Also had a chilli beer last year, took two mouth fulls and the rest went down the drain.
With chilli's I reckon you will have to experiment and build up the flavour slowly, so you dont over do it.
