hi all just got back into brewing after about 5 months off. i have some old hops that need using up and are as follows

tettanger
aramis
target

also got some styrian goldings, summit, columbus, magnum, duchess, keyworth m, amarillo. but want to know what the tettanger will go best with and were to use it ?

Whatever you wanna brew.

Tettnanger is simply a classic German noble hop. In reality, you could use it as an excellent aroma hop in any style of beer, light bodied, golden ones most of all. Not exactly the same profile, but a perfectly fine substitute for any recipe calling for Hallertau, Saaz, Spalt, etc. In other words, it won't be "wrong" in any beer whatsoever, especially if you choose to blend with more distinctive, true-to-style varieties each time.

I'd brew a big batch of basic, light, crisp summer ale.

keyworth m? Is that a local South of Nottingham hop? Or was it collected from the Hedgerows nearby?
I live a couple of miles away so just wondered as I've never heard of it.

+1 to that ! Tett is a lovely hop.

Nice simple all Pale/lager malt grain bill to about OG1048

Magnum to bitter to 25 IBU
Then tett in at 10mins and Flame out to suit how much flavour aroma you want.
Its quite sublte so it would be difficult to go too far
Final IBU around the 35 mark would be a great beer.

Very nice easy drinking summer ale that even lager lovers will enjoy!

I was surprised to see that in his list, too. Keyworth's-M is an English midseason variety, as opposed to Keyworth's-Early. Both are considered choice English aroma hops, but I thought they were no longer grown, or in any case extremely rare. Check out the Alpha Acid percentage of 7.5%! That puts it closer to modern Challenger than traditional English varieties like Goldings and Fuggles. I'd be interested to hear how it brews.

magnum 18grams 25 ibus
tettanger 60grams 10minutes
tettanger 40grams flame out steep hops

love the fact my missus works on the weekend now. 2 weekends 2 brews ha ha ha. what she dont smell or see dont hurt her ha

right brew over. i ask a question one i may regret not asking before. i brewed a simiar ale last week end with uk cascade so i kegged that then dumped this beer from today straight on top of the yeast in the bucket from last week. is that ok to do? wish i had ask before hand?

part i am worried about the most is the ring of yeast that was on top of the bucket from the last brew that is still there. will this be ok? last brew was 23litres this one 25ltrs so its under wort ? hope this will be ok. would of bought yeast today like i usually do but i couldnt get to the shop as my car is fooked!

Should be fine, nice active yeast cake should get off to a good start!

Assuming the wort was transferred to the FV containing the yeast at pitching temp then you Gould be golden

Yeah, you'll get away with it, we've all done it, but it is drastically over-pitching. I don't fully understand why that's a bad thing, but there are some explanations in the White/Zainasheff Yeast book. You'll certainly reach final gravity faster than usual, in any case.
