AG#11 - Tomahawk IPA

Inspired by Broadford Brewer's Tomahawk IPA (Blog) I intend to have a go at a slightly modified version

Recipe: Tomahawk IPA
Style: 14B-India Pale Ale(IPA)-American IPA

Expected IBU (using Tinseth): 64.9
Expected Color: 15.7 EBC
Apparent Attenuation: 75.0 %
Mash Efficiency: 68.0 %
Boil Duration: 60.0 mins
Fermentation Temperature: 19 degC

Fermentables
UK Pale Ale Malt 3.374 kg (55.3 %) In Mash/Steeped
UK Lager Malt 2.000 kg (32.8 %) In Mash/Steeped
German Munich Malt 0.317 kg (5.2 %) In Mash/Steeped
English Wheat Malt 0.317 kg (5.2 %) In Mash/Steeped
UK Caramalt 0.095 kg (1.6 %) In Mash/Steeped

Hops
UK Northdown (6.6 % alpha) 48 g Loose Whole Hops used 60 Min From End
US Cascade (7.2 % alpha) 40 g Loose Whole Hops used 30 Min From End
US Columbus(Tomahawk) (17.1 % alpha) 10 g Loose Whole Hops used 5 Min From End
US Cascade (7.2 % alpha) 60 g Loose Whole Hops used 1 Min From End
US Columbus(Tomahawk) (17.1 % alpha) 40 g Loose Whole Hops used At turn off
US Columbus(Tomahawk) (17.1 % alpha) 50 g Loose Whole Hops used Dry-Hopped

Other Ingredients
1/4 Whirlfloc Tablet and tsp yeast nutrient 10 Min from End

Yeast: DCL US-05 (formerly US-56) SafAle

Mash Schedule
Mash Type: Full Mash
Schedule Name:Single Step Infusion (66C/151F)
Step: Rest at 66 degC for 60 mins

Not much different from the original recipe except I have substituted Northdown for Pilgrim (as I have loads); and added lager malt mixed with Maris Otter. I have also used 100g of Cascade rather than 80g, and stuck the majority in at 1 min from the end of the boil for aroma.

Not sure when I am going to get this one on, but hopefully in the next couple of weeks so I can drop a couple of bottles off to my Dad when I head up north again next month.

Managed to get this brew on last Wednesday. Did not have time to do a full brewday report. Pre-boil OG was 1.046, but SG was 1.051. Few points short on the latter, mainly due to less evaporation than planned for (I didn't insulate the boiler as it was a warm day). I didn't measure how much beer I collected, but looking at the no chill cube there is more than usual. My MT maintained temperature better throughout though this time, and I only lost 1 deg over an hour.

I will pitch this tonight and dry hop as above and report back in due course!

Finished at 1.011 and bottled this last night. Lovely pineapple/citrusy smells from the FV after the dry hop (4 days). High hopes for this one and hopefully the new water treatment (Bru'n) has made a difference. Tasted delicious out of the trial jar. Will put up a pic of the first pint. Not even 2 weeks in the bottle yet but had to do a quick quality control check! A big hop hit and fruity taste with a big bitter after taste. Tastes great already and should be better when it clears in a few weeks. The new water treatment (Bru'un) seems to have made a difference with no medicinal tastes I had been getting before. Very, very pleased with this.
