Brewday 26/05/07 - PoP's Stout Recipe - 2nd AG

Ho-hum, I asked my dealer to keep my grains order back so I could drive over and pick up the stuff I need to brew this stout - but he's put it all in the post ](*,) . Hopefully it will turn up today, and my wife will be in when the truck arrives, otherwise I have no crystal-meth, er malt and no barley flakes to make my stout.

I guess I could make something else, but pretty much everything uses crystal malt so without that I have a bit of a problem.

Still, fingers crossed I'll get my grains today, or can score some on the streets, and can brew my second AG tomorrow.

Something I read here on Jim's site that I'd love to try is to make a pale malt but then caramalise
the first runnings in a saucepan on the hob, to deepen the colour and to add, ummm, caramalisey
flavours.
I think that cropped up on a TTL thread.

Barry,

I heartily recommend an SL clone. I did one as my first AG brew a couple of weeks ago, It has produced a thoroughly lovely ale, which is going down far too quickly!!!
I used Optic malt, rather than MO or similar, and Cascade hops instead of East Kent Goldings.

As has been noted many times before, it doesn't matter what you brew, it'll be great!!

Oh boy, it's going to be one of those days!

Left the mash tun tap open while doughing in with predictable results - still, actually only a couple hundred ml of wort lost I think; the rest is all wrapped up and hopefully doing its conversions...

Also, missed the mash temperature of 68 by quite a bit - had to fill the tun nearly to the brim with boiling water just to get 66 - I'm going to need a bigger mash tun, I think. I don't think I'll get away with a two stage batch sparge this time - probably three runoffs will be more like it.

how did you manage to miss the temp by so much?

I heat my water up to just shy out 80C chuck it into the mash tun (no pre-heat) i then weigh out my grains etc by the time i get back to it the cooler has absorbed the heat and the whole mash tun interior and water is sitting at about 72-74C i then dough in the grains and its always in the right ball park ie 66-68C, if i can be bothered i can adjust it with reasonably small volumes of water.

Lack of experience with the mash tun coupled with slow doughing in I think.
