Any Mikkeller recipes?

Post by adm » Thu Oct 02, 2008 11:41 pm

I've got some various Mikkeller bottled beers in, and have to say that the ones I have tried so far are fantastic:

Stateside IPA: Gorgeous 7% citrussy US West Coast style IPA, lots of american hops - probably cascade & amarillo.

Beer Geek Breakfast: Fantastic 7.5% rich coffee/dark chocolate imperial stout

Mikkeller/Struisse: 9% Belgian type (Leffe on steroids), hoppy, citrussy, caramel, orange....

Anyway - has anybdy tried beers from ths brewery and have any ideas how to clone or brew similar? Some of them are bottle conditioned, so I can have a go at propagating some yeast.....but as for the recipe formulation, they're pretty "extreme" beers and I don't really know where to start.

The only source I have found to be credible is this:
http://forum.northernbrewer.com/viewtop ... 20&t=77618

They use a blend of wyeast1056 and wlp099 for all these single hop IPA's. This info came from the local bar owner who emailed Mikkeller directly for recipe info for customers.

EDIT - Here is the actual email:

Here is his reply:

Dear Brent

Thanks for your mail.

Wow! 10 at the same time - that is awesome. Thanks for promoting Mikkeller.

For the single hop beers they are all brewed with the same base-recipe:
67% pilsner malt
11% Cara-Crystal
11% Munich II
11% Flaked Oats

Yeast is American ale (Wyeast 1056/WLP099)

Hops 60min, 15min, whirlpool and dry.
About 100IBU.

Hope you can use this!

Best, Mikkel

I'm not sure on the O.G., I'll try to find that out before the event, but the beers are all 6.9%.

Great find, thanks for sharing!

Hey everyone, write this one down. It's the perfect single hop test recipe. And if you're aiming for elevated ABV, mostly neutral but with subtle American and English characteristics, the blend of Chico yeast and the Eldridge Pope/Thomas Hardy high gravity strain is pure genius!

Blimmin excellent!

So if you were to get the two wet yeasts, would you make a starter with them both pitched? Would'nt one overpower the other?

Top research here, noted!

There's a few of their old homebrew recipes in the danish Beercalc recipe database at Håndbryg.dk here:
http://haandbryg.dk/cgi-bin/beercalc.cgi

You'll find them by entering "mikkeller" in the Brewer search field. As you can see, they won a couple of medals in '04 and '05. But how these compare to their present commercial brews I don't know.
