Had a little peek this morning to see what the rousing did and noticed a distinct "pinking up"of the brew, now need to decide when to get this into the cold to start dropping stuff out. My thought so far is to rack off from the trub as soon as things have settled and to fine this as I fancy having a clear beer rather than the wheaty one I had last time to show off the colour, any thoughts?

What about a shot of the fermenter with the raspberry mix in it? Did you have a thread for version one or some pics of that one?
I would agree that this is a beer you dont want to over hop given the presumably low FG and delcate flavours. Personally I might have kept the grain bill lighter in colour so as to ensure a lighter/brighter finished beer. Using pilsner and a very light crystal type malt etc.

Quick update and a question.
I've racked this off and the colour is not a vivid pink but definitely pink, between a pink champagne and a pink grapefruit juice. Taste is a definite raspberry hit although aroma is a little less distinct but unmistakably rasperry. So, so far so good. The downside is it is rather dry with a little tartness, I could leave it and have it as a refresher for summer drinking or I could prime with something that would leave some residual sweetness. If I went for the latter what would you advise, I'm thinking maybe golden syrup?

Golden syrup won't leave anything behind, in fact being an invert sugar it'll ferment out almost completely.
Honey will leave a little flavour behind, but not sure if you'll easily get a residual sweetness from anything. Maybe throw in a few sweeteners, like 5 or so in the whole batch? I can't stand sweetener myself but I can't imagine that a really low level background amount would be that bad.

Any raspberry brew I've done has ended up quite sharp, but I do like that so not so much an issue. I find it quite refreshing too after its carbonated & chilled.orlando wrote:Quick update and a question.

I think golden syrup is very fermentable so its unlikely to leave any residual sweetness, though it may leave a hint of burnt sugar that may not enhance subtle raspberry flavour.
Maybe try priming with a mix of lactose & ordinary sugar. Lactose wont ferment & ordinary sugar there just adds fizz.
I'd test first adding different amounts of lactose to set volume of beer, before bottling to determine sweetness level you want.

Well this has had time to carb up and so I thought I would try one when it was a little sunny and so a decent backdrop to the beer. Unfortunately the camera has not captured the colour very well, it is actually very good indeed and has a deeper red to it than the picture conveys. The aroma is very good, but if it is anything like last time does fade fairly quickly. It has a lovely raspberry taste and is a little drier than I would like but everybody else prefers this so my idea of mashing a little higher next time might not be universally popular. I am particularly pleased with the bittering which is perfect and does not intrude at all. If you like the sound or look of the recipe you could do it as is and I'm sure you will be pretty happy with this. Just need a sunny day
