I fancy making a stout but all the recipes i've seen all have roast barley and the HB shops by me didnt have any!
can i make it without or will it not taste anything like a stout?
I have Pale Malt, Flaked Barley, Crystal Malt, Chocolate malt, Black malt, and loads of different hops. only yeast i have is safale S-04 and Gervins ale yeast.
could i make one out of that lot?

Stout Ingredients
You can make good stouts with out roasted barley, generally the addition of roasted and flaked barley is for a dry Irish stout. You could also make a porter either you ingredients, but leave out the flaked barely.
To get the colour and flavour you can add 500g of chocolate malt or a combination of chocolate and black malt at a ratio of 75:25. Some people like more black malt but if you are un sure start at the lower end an increases it over successive brews
S-04 or Gervins ale yeast will work out good!
Here is a basic recipe
4.5kg pale malt
500g crystal
500g Flaked barley
375g chocolate malt
125g black malt
I like s-04, but it’s up to you
