doom bar style critique please
Have been reading through all the doom bar stuff on here and thought I'd have a stab at a recipe. Have tried to take into account all the late addition info from Sharps head brewer.

I wouldn't bother. It's an insult to beer making and an insult to Cornwall. Such a horrible beer.

You go on holiday to Cornwall, see a pub with the words "Free House" outside, you step inside and you can guarantee that you will be offered the awful Doom Bar and the bland Tribute from St Austell Brewery. St Austell are capable of brewing decent beer but IMHO Tribute has the blandness of home made bread when you have forgotten to put enough salt in, you are constantly searching for some hop bitterness, but it isn't there.

haha. I'm very proud of St Austell Brewery... but... if I never had to taste another pint again I'd be grateful of something different.
At least a guest Ale in every pub would be a benefit. They hold the monopoly and I couldn't be more bored.
Doombar seems to be the favourite among everyone I work with. Stuart Howe is the best brewer in Cornwall but Doombar is hideous.
Everyone who wants me to brew a beer for them wants me to clone Doombar.
I think I'll have a go at this recipe if you think it turns out well just to keep my boss happy.

Seems I may have opened Pandora's box! Been looking at my ideas all evening,and what I can't figure is why Mr.Howe used northdown and N.B. both very similar IMHO. In reviews on beer advocate there are often mentions of a fruitiness. I may change it and use a bit of bramling x instead

Dave Smith hit the nail on the head. To be fair I've not tried Doombar for some time because I used to find it watery and horrible and just drew a line in the sand and said I'm not drinking that anymore but maybe I should try it again just to confirm whether my memory of it is accurate.
I agree about Tribute but have to say that I have a lot of respect for Roger Ryman and what he's done for St Austell brewery turning it from mediocre at best to very good in some cases. If you ever tasted Duchy Bitter when they were still making it you will know what I'm talking about. Like Belter though I wish St Austell pubs and all the free houses in Cornwall stocked more guest ales.
If you're ever in Cornwall at the end of November/start of December I recommend St Austell's Celtic Beer Festival because they produce a phenomenal number of different beers for that as well as having beers from all over the UK and some from overseas from other breweries(I think about 150 in total). Big Job IPA which is their extra strong and extra hoppy version of Proper Job is amazing. It's when I go there that it makes me realise that when they are producing beers for reasons other than to make the most money possible they can craft some pretty special brews.
Anyway Timbo. Sorry to hijack your thread. I wish you every success.

No apologies needed. Its refreshing to hear the views of fellow brewers. It opens your eyes to the exciting brews out there. Just been on the sharps site to look at the connoisseur range. Plenty to try there!

The honey tripel is a lot like Duvel. I know Duvel is a favourite or Stewart Howe so maybe he was aiming for that. I will say though that I prefer Duvel out of the two.
He made a dubbel coffee stout using Rochefort yeast and it is lovely.

Well changed to bramling x big late addition......and its gone. Seriously, a really nice.dark Ruby beer. Served at about 12°c. Finished. Mates gave really good feedback! Might up the barley a bit, head was a little thin and little retention...but that's just aesthetics. Lovely pint if I say so myself

I had Doom Bar last year at The Eagle in Clapham. I was not impressed. I can brew a better bog standard beer with my eyes closed.
