Okay. Ditch's made simple(r): As I'm sure I mentioned ..... I put the malts in. Then I top up to toward the three gallon mark, with crushy treated water. Then, I have at it with the drill.

I really have no target specification, at this point. I just let it go. It goes! Then, I lug this lighter weighing bucket of frothed liquid into my store room. There, I dump in a heater and a packet of yeast. Game on.

At Some Point (pretty arbitrary) between then and consumption; I'll top it off with crushy treated water. Bringing the total up to four gallons.

Are we clear now ....?

You were clear before Ditch. It's simply that the geography of my home and brew space (and the conditions of she who will be obeyed) make it far easier to top up where I do the initial mix than where I leave things to ferment. I like an easy life, so I was trying to keep the amount of topping off to a minimum and simply did not allow enough for the level rise as the foam subsided.

It's not a biggy, my last brew was 21 litres and was good enough to send others out to buy the kit the day after trying it and this looks to have settled out at the same volume, so I'm confident I will again ed up with a brew to pout a smile on my face :D

Sipping my first pint now. Followed the recipe and stuck it in the keg 10 days after. Got amongst it immediately and I am pleased with the result. I have a keg of bitter first in queue so have the luxury of being able to let it mature for a couple of weeks. Cheers Ditch !!

FJ; Why not try a crafty pint, maybe each few days? See how it seems, to you, to change? Only, this stuff's like a chameleon in a pint glass :wink:

Just got in from work and went straight to the black stuff!! It's good to have a choice so will be able to taste it as it develops.

10 days on I have gone back to this. I generally brew AG but cant believe how good this has got. Very nice liquorice and coffee flavours and very moreish. Such a quick turnaround aswell. If you haven't tried it yet do it. You won't be disappointed.

PS: WalesAles, did you try a doubled up version? I've been waiting for news reports of a large part of the country covered by a blanket of strangely good smelling foam...

Hello Tazzy,
I was going to order the gear last night but it was all becoming a bit expensive! Maybe some other time. I`m going to stick with the `3 Gall stout`instead. Going to try Extra Dark DME instead of using Dark. I will have to rename it then because it is slightly off Ditch`s recipe!

I suspect that civilisation may be safer for your decision :D

As for renaming it; I have never dared to call my brew a Ditches Stout. If the Master has not touched it, it is not the real thing; so I have always referred to my brew as a “Ditchesque” stout. I strive to duplicate the one true process, but know that it will never be exactly as it should. To be honest, I don’t care; it tastes great and that’s good enough for me.

One of my friends recently decided to make his own variant. Instead of 1Kg of dried spray malt he used 2 x 650g jars of Potters Malt Extract (purchased from Holland and Barrett on a buy one get second half price deal)*. First tests suggest that this is sweeter than Ditches recipe, perhaps a little sweet for my tastes, though the sweetness may disappear with age (if it lasts long enough). I am mulling over the idea of making my next brew with 500g of spray malt, one 650 jar of malt extract and 300g of raw cane sugar. The way my friends brew ages will help me to decide. In the meantime I need to transfer my current batch from the FV into a barrel this evening, it did not make it last night.

Joined today after reading through the thread from the start. First stout brewed this afternoon as a result. It'll have to be bottled unless SWMBO let's me go out and buy a keg in the next 10 days or so, so we'll call it a Ditch's homage rather than a true Ditch's stout. 1kg of Extra Dark spraymalt and a mugfull of soft brown sugar. Plenty o'thrahing about and I've got 22l or thick black stuff in my FV and wondering when the super-kreusen will develop. Can't wait.

Glancing at my thermometer, I see it's 79.3 F in this room. Probably much the same with you then? At these temperatures? Practically anything could happen. Sod the fish tank heaters!

Just take a look at it in twenty four hours. See what it's doing by then. Then look again in another. I suspect you'll see some appreciable stuff :mrgreen:

Thanks Ditch. Just had a look there now and it indeed is arising! I've got in the Coopers FV which is semi transparent and I'd say that the krausen is at least a third of the height of the brew itself. The smell permeating through is amazing already. I've got a wet towel wrapped around it so managing to maintain about 25/26C.
