Summer recipe using only dwarf hops?

Post by Jamie488 » Thu Jul 11, 2013 8:47 pm

Hi there. I am planning to do an brew session this weekend for a friends weeding but looking for a good light summer recipe using only dwarf / semi dwarf hops? I have the following.

Marris otter
Munich malt
Caramalt
Crystal
Torrified wheat

Hops
Summit
First gold
Pioneer
BOADICEA

Would be really interested to see what you have tried before??

How about a classic Best Bitter, say 4.5% ABV made up of 90% Maris Otter, 5% Crystal Malt, 5% Torrified Wheat, bittered to about 35 IBU with Boadicea for 60 min, First Gold for 30 min, and Summit at flame-out/dry-hops? Ferment with an historic English ale yeast.

You've got infinite combinations of excellent beers with that list of ingredients, though!

Wouldn't use Boadicea if you want to keep your reputation. Pioneer and First Gold would be my choice, with as Seymour suggests, Summit dry hop or use the First gold, lovely hop to use in last or dry.

Thanks both for the ideas. Think I will use first gold and summit. What is pioneer like? Also just curious why boadicea has a bad rep?

I'd use Pioneer and First gold as the late/dry hop too

Not a fan of Bodicea, However Adnams use it quite a bit - I wont comemnt any further, apart from to say its possibly the only hop I dont like...

Pioneer is said to be lemony/citrus and First gold I find is hoppy in an 'English way' somewhat similar to Goldings but a bit more marmaladey...
Made some good beers using it (First Gold) on its own... But as already stated I think it would work well as a late hop with Pioneer early on

Summit is nice IMHO but not to everyones taste, it seems...

FWIW I would also go with a best bitter - something like :
MO 91%
Munich 5%
Wheat 4%
To OG 1045

A good top croppper that gets about 75% AA and leaves the beer clear (like Thwaites) but not too dry.

Hop to 30-35 IBU
Pioneer for wole of boil to 20-25IBU
Then First gold in last 5-10 mins to 5-10IBU

Good luck!
