Just thought I'd post the recipe for this weekend's impending brew...

Maris Otter - 96.5 %
Crystal 120 EBC - 3.5%

Magnum FW 75mins - 10.5 IBU
Perle FW 75mins - 6.6 IBU
Perle 30 mins - 12.6 IBU
Cascade 15 mins - 10.6 IBU
Cascade 5 mins - 6.4 IBU
Cascade 0 mins - 1.2g/l
Cascade Dry Hop - 1.7g/l

OG 1.048, FG 1.010
IBU (Tinseth) 47

Fermenting with San Diego Super Yeast

A little different to, but based on the Mysterio version. I'm hoping to really boost the hop aroma and flavour so a little more late addition and wanted to chuck in a little extra Perle for no particular reason!
Here's hoping this one goes well...will be testing out a few new things; using Bru'n Water to calculate additions, and using a Salifert calcium test too prior to working out my additions as well as using Phosphoric acid :twisted:

I fancy doing that - is there any way I can find out what weights I need without using a calculator?

Not really I don't think.
I posted it this way because I brew a reduced length so wanted to give a guide as to the hopping rates for others to scale to their own kit. As I have recently learned, scaling is a very complex subject!

However, as a rough guide I've scaled to 19 litres (into the fermenter).

4118g Maris otter
149g Crytal 120 EBC

6.6g Magnum (14.4AA) @ 75 mins, FW
6.6g Perle (9.4AA) @ 75 mins, FW
16.5 Perle (9.4AA) @ 30 mins
22.0g Cascade (9.2AA) @ 15 mins
32.9g Cascade (9.2AA) @ 5 mins
22.0g Cascade (9.2AA) @ 0 mins (30 min steep @ 75C)
32.9g Cascade (9.2AA) Dry Hop, 5 days

Any reason why you're using that strain rather than the actual Sierra Nevada Chico strain?

Hi Matt, I bottle condition the vast majority of my beers and have typically used Chico for many of my brews as I'm a bit of a hop head. But I've been getting more and more irritated by the way that it refuses to stick to the bottom, even after a long storage time, and the poor flocculation even after fining and crash chilling.
With this in mind I wanted to try something new and I hear this yeast is also neutral, but with improved flocculation and a recommendation for its use in bottle conditioning as an alternative to Chico. I'm hoping it lives up to expectations...
To tell the truth, I was thinking about Pacman initially but can't get hold of it unless I order from the US!

Brewed this one at the weekend, and all was well aside from having to pitch about 24 hours later than planned! That'll teach me to get the starter on late...
Anyways, pitched last night without a hassle, the wort produced was fine and by this morning a nice Krauesen is forming. I'm hoping this'll have good hop flavour, so will test to see if the 5 min addition has given the required flavour profile as others have suggested it does elsewhere. Then rack to secondary with my blitzed dry hops...
I've recently started using bru'n water and phosphoric acid (2nd brew like this) and this time around I was very close to target. And it showed! A real clarity to the wort, and a much improved break, as well as good extraction. If it comes through crisp and clean then this will have been a triumph in stepping up my brewing process.

Another brief update; 48 hours after pitching and its down to around 1.014. I pitched a reasonably decent amount of yeast but this is crazy fast! Very impressed so far, smells good in the ferm fridge :)

I've had this one in the bottle for a week now, and it is bloody delicious. Primary was about 6 days, then about another 5 in secondary with 30g dry hop Cascade then cold crashing for a few days before bottling. Finished up at 1.012.
I can thoroughly recommend this yeast, clean flavours and flocculates beautifully. Will be adding this to the bank!

My first AG and still one of the best was Mysty's SNPA. Awsome.
I used old faithful Nottingham.
Try an all Perle version sometime I did once because it was all I had and fell in love with Perle. It's an under appreciated hop!

I haven't tried brewing the recipe, but the commercial example is awesomely smooth and drinkable!! Its like a lady's version of the SNPA because u get alot of hops without the harshness. U cant tell it 40 ibu.

My only dislike is it does get a little too sweet when you are on the second bottle. So i would replace the 80L crystal with a light caramalt or something in the 10-15L range, dont forget that WLP002 does leave behind alot of residual sweetness on its own.

That's alot of hops, but the choice of yeast does tone it down a little and the result is very balanced.

MUST USE FRESH cascade hops!!
