Columbus Chinook Simcoe / Mosaic Recipe
Hi,
Brewing this weekend and looking to do a about a 5.5% 'IPA' made with Columbus Chinook Simcoe or Mosaic.
Im thinking of doing the following:
4.6KG - MO
0.3KG Munich
0.3KG Carapils
Columbus (to 55 IBU)
Mix of Columbus Chinook Simcoe / Mosaic at 15 mins, 10, 5 and 0.
Dryhop with about 50g mix of above.
US05 yeast...
Any thoughts, comments, advice on this would be great!

You can't really go wrong with what you are proposing - It's a textbook american IPA.. Remember to take into account the extra potential bitterness with the late hops at 15/10/5 and if you do a long steep - they can add up. Though 70 IBU in a 5.5% IPA is not unusual.
The grainbill looks good, Personally I would leave the columbus out of the late hops, but that's just my taste. Otherwise you are good to go.
How much did you plan to late hop with in total (not counting dry hops) ? 100g, 200g 300g ?

I think i might be with you on leave out columbus as a late...

I did this AIPA with Centennial, Columbus and Simcoe which worked very well:

I only dry hopped with 20g of Simcoe when I first tried it and after about 6 weeks in bottles it tastes great, very distinctive hop taste and aroma.
I brewed it again dry hopping with 60g of pureed Simcoe and a small amount of left over Amarillo and I'm currently waiting out the last couple of weeks until tasting it.

Thanks for that..looks a nice recipe. Brewed my version on Sat and went well..smells good hopefully turn out well

I actually had way less Mosaic than i thought (only like 20g) so mixed it with simcoe and used a combined mosaic/simcoe blend in the mosaics place at 15 mins, 5 and FO

I brewed an all mosaic IPA (prob why i only had 20g left!) and it was the best beer i'd ever made! Lovely hop, yes not in your face like some other US hops but is lovely and smooth and fruity
