As you know, I'm always hunting for good beer recipes. You may have noticed lately I'm getting some proven ones directly from maltsters. This makes perfect sense when you think about it, because the companies producing the malt ought to know how it performs best, which malts go best together, etc. It's also in their best interest to recommend the best possible recipes because if the brewer produces great beer, they'll keep coming back for more of that particular malt.
Today I'll share some from Castle Malting in Belgium. Their slogans are straight-forward and honest, "Belgian Malts That Make Your Beer So Special" and "Malts From The Country Famous For Its Beer."
Castle Malting: Belgian Stout
DESCRIPTION:
This Belgian-style stout has big roast flavors reminiscent of chocolate and coffee layered on top of the slightly tart dark fruits that Belgian yeasts can produce in spades. In short, it's delicious.
Original gravity: 15° Pl or 1.061
Alcohol: 6.5 %
Colour: 65 EBC
Bitterness: 28 IBU
INGREDIENTS:
Malts:
73% Pilsen
6% CaraGold
10% Chocolate
10% Black
1% Special B
Hops:
Saaz
Yeast:
Safbrew S-33
Step 1: Mashing
-Mash in 80 litres of water at 62°C, adjust the pH of the mash to 5.4 during 1 hour and 10 minutes
-Raise the temperature to 72°C and rest for 10 minutes
-Raise the temperature to 78°C, rest for 2 minutes
Step 2: Boiling
Duration: 70 min
Add 420g of Saaz hop at the beginning of boiling
Add 100g of Saaz hop 10 minutes before the end of boiling
Step 3: Cooling down to 24 °C
Step 4: Fermentation at 25°C (6 - 7 days)

I've had a really good stout brewed with rouchefort yeast brewed by Sharps and more recently Bristol Beer Factory's Ultimate Stout which tasted very similar and also used a Belgian yeast which they weren't specific on. I'd like to give one a go some time.

I'm sorry to say but I have very bad experience with CM malts quality. Almost worst of all I ever used.

Interestingly enough apart from their basic malts Castle Maltings or Chateau Maltings ( also marketed as Brewferm ) obtain their speciality malts from Dingemans!zgoda wrote:I'm sorry to say but I have very bad experience with CM malts quality. Almost worst of all I ever used.
