Stone style sort of

Recipe comments please this is a bit of a user upper so limited on additions also I have wlp 007 or us05 preference towards the 007 as it clears far better than the 05 what do you guys reckon

Dough in the following fermentable ingredients.

4.836 kg of UK Lager Malt
4.836 kg of "new batch" added to inventory 6 Feb 2012

1.434 kg of UK Wheat Malt
500 g of Sugar - White Sugar/Sucrose
300 g of UK Flaked Oats
200 g of UK Medium Crystal (120EBC)
200 g of "new batch" added to inventory 12 Oct 2011

Mash pH should be 5.2.

Allow the temperature to stabilize at 66 C. Allow to rest at this temperature for 60 minutes.

Add 2.59 l of water at 66 C, mix and run off.

Add a further 13.50 l of water at 66 C and mix.

Run off to collect a total of 27.00 l of wort.


Bring the wort to the boil.

Add the following hops at the times given.

20 g of Calypso (15 Min From End)
20 g of Belma (15 Min From End)
20 g of US Amarillo (15 Min From End)
20 g of "new batch" (alpha 5.0%) added to inventory 2 May 2012

15 g of US Simcoe (15 Min From End)
10 g of US Willamette (15 Min From End)
10 g of US Cascade (15 Min From End)
10 g of "new batch" (alpha 4.5%) added to inventory 6 Feb 2012

Boil the wort for a total of 60 minutes.

At 'turn off' add the following hops.

30 g of Belma
30 g of Calypso
24 g of US Amarillo
24 g of "new batch" (alpha 5.0%) added to inventory 2 May 2012

20 g of US Willamette
20 g of US Cascade
20 g of "new batch" (alpha 4.5%) added to inventory 6 Feb 2012

15 g of US Simcoe
Chill the wort to the appropriate pitching temperature and rack the wort to your fermenter.

Fermentation
The desired volume at pitching is 21.00 l.

Pitch 1 pack(s) of No Yeast Chosen and ferment at 18 C.

If using a secondary, transfer when appropriate.

Racking And Packaging
Dry hop with the following hops.

50 g of Belma
50 g of Calypso
20 g of US Willamette
20 g of US Cascade
20 g of "new batch" (alpha 4.5%) added to inventory 6 Feb 2012

The key to stone's beer imo is using the WLP007. That finish is unmistakable, US05 will make a good beer but not a Stone like beer. The body is so much like WLP007

Thanks weiht 007 it is then have you tried calypso or belma hops this recipe is loosely based on r&r ipa watched a you tube vid for the recipe although I altered to suit the ingredients that I have decided to give the coconut a miss as well not too sure if I want my beer to taste like that

Not tried calypso, used belma but not in big qty. Could not tell you much what it did, since it was only to compliment, but it seems its a love it or hate it hop.

Try looking for the Ruination IPA recipe? solid beer.
