Just trying to get a recipe together for Octobers brew, and I fancy a hoppy mid-strength English Bitter. I have only got some dry Nottingham yeast, and don't now if that will suit this style.
I am happy to try another Wyeast Smackpack, or a suitable dry yeast.
How does this look?

Re: CSB - Colchester Special Bitter
That looks like a delicious recipe, for sure. Nottingham would certainly work, but wouldn't have the estery complexity of the original. Colchester supposedly used the Hook Norton strain, ideally suited to their unique "double drop" fermentation regime. The Brewlab Sussex strain is similar (or possibly even the same Hook Norton strain). If you wanna experiment with bottle-culturing, some Hook Norton Flagship IPA and Double Stout bottles are believed to contain primary strain.
Of course you have lots of good English ale yeast options from Wyeast or White Labs. Otherwise, Windsor or S-33 or Muntons or perhaps some of the new Mangrove Jack dry English yeasts would have a little more personality than Nottingham.
Happy brewing!

Cheers Seymour!
I wasn't trying to replicate a particular brew, I've only named it CSB because I live in Colchester
I have got 2 packs of Windsor that I was planning to use in a Stout kit, so I may keep them for my CSB instead.
I'm assuming that I will need to mash around 65C if using Windsor?

Being organised by the CBA Shed Brewers of East Anglia, most of us are chipping in some beer.Monkeybrew wrote:Didn't know that was going on, sounds like I am now!orlando wrote:Hey MB, will you be going to the Victoria Inn's home brew festival in November?Monkeybrew wrote:Cheers Seymour!
