First: @Seymour: Thank you! Everything was fine.

Yeast are ready, grains bill as well:

Mash water was a little low: 67.4°, after correction it will stay for the whole mash time at 69.5°.

Pre-boild density is as excpected 1037:

I like your method for suspending the hop bag in the boiler. What is the reason for doing this? Did you use pellet hops?

Yes, pellet. I was fed up to loose so much in turb. I easy gain 1 liter and half. I also didnt notice any change in the bitterness with the bag or without the bag.

Short update: after 8 days of fermentation, check of the gravity: 1017 :shock:
I've expected lower, expected was 1013. I've added half of S04 on 1 kettle and give a squizz (not vigourous) to awake the yeast. Hope I will reach at least 1015.

Don't worry. It'll get there, slowly but surely. That McEwans strain is very high attenuating, but not necessarily super-fast, especially when churning through complex, caramelized malts.

I'd give it more time, actually. There should be no rush to rack it off the yeast, this is one major advantage you have over a commercial brewery where time and turnover = money.

Bulk-aging is supposedly 1.5 times more efficient than aging in the bottles. In other words, you can leave it conditioning in the carboy for 4 weeks, or else you'd have to leave it in bottles for 6 weeks to achieve the same benefits.
