Drake's Special Dark

I brewed the beer outlined below in honor of a golden retriever named Drake who passed from this world last weekend. He was a great family dog. Please feel free to substitute domestic malt products for the Briess products and real EKG for the U.S. Goldings.

Drake's Special Dark

Final Volume: 3.5US Gallons (~13 liters)

Note: One will donate approximately 0.25US gallons to the hops gods for the privilege of using whole-cone hops, which means that one will only collect around 3.25US gallons of wort.

6.0lbs Briess 2-Row
0.5lbs Briess Torrified Wheat
0.5lbs Briess 60L Crystal
0.5lbs Briess Carapils
0.25lbs Thomas Fawcett Pale Chocolate

Mash Duration: 2 hours

Mash Type: Single Infusion

Mash Temps:
Strike: 152F/67C
End: 150F/66C

Mash Liquor:
2.5US Gallons 172F/78C (strike)
3.5US Gallons 170F/77C (sparge)

Boil Time: 2 Hours

Hopping Schedule:
0.5oz Whole-Cone Magnum 16.5% AA (90 minute boil)
1.0oz Whole-Cone U.S. Goldings 4.7% AA (15 minute boil)
1.0oz Whole-Cone U.S. Goldings 4.7% AA (0 minute boil)

Irish Moss: 1tsp (30 minute boil)

Yeast: 300ml Brewlab Devon 1 (stepped from 40mls and grown on a stir plate for a higher cell count)

O.G: 1.062
F.G.: TBD

Looks like a great brew fella! My condolences about Drake! We lost our lad Ripley (Border collie/black lab) earlier this year! It's a sad time! :( A fitting tribute I'm sure!

I have been wanting to find a way to work some Thomas Fawcett Pale Chocolate Malt into a brew. I haven't brewed a beer that contained roasted malt in a long time.
