Bitter using nowt but Fuggles

Hi good people, I'm after a bit of advice on this bitter recipe I've put together. My aim is to end up with a light/medium copper colour (similar to Hydes Original Bitter if anyone is familiar with it), with a prominant hop flavour/aroma (but not over-powering the malt) and moderate bitterness. Not sure what yeast I'll use yet, I may try the Wyeast Thames Valley as I am a big fan of White Labs Burton (I've heard they are very similar). I've only done 10 AG brews so far and 9 of those were other peoples recipes, so any suggestions/feedback is appreciated.

Oh, and I'm BIAB.

Brew length: 23L
Mash length: 90 min
Mash temp: 151 deg F
Boil length: 90 min
Estimated original gravity: 1.045
Estimated final gravity: 1.010
Estimated IBU: 39.3

Grain:
Maris Otter 4.2kg (80%)
Chocolate 160g (3%)
Medium Crystal 520g (10%)
Flaked Barley 370g (7%)

Hops: Fuggles - AA 5%
60 min: 80g
10 min: 40g
Flame out: 20g
Dry hop: 20g

there is a beer called what the fuggles by wadworth very nice pint

With 160g Chocolate you'll end up with a very dark beer. If you want a light/medium copper colour I'd crank right back on the Chocolate or even eliminate it. Even 520g Crystal will make it a fairly deep copper. If you particularly want some flavours from the chocolate you could reduce to, say 50-60g and halve the amount of crystal. There is an element of trial and error of course 'til you get it to your taste.

If you want the malt to shine through I'd maybe reduce the IBUs a bit to say 30-35. But all Fuggles should be fine. It's a good way of discovering individual hop characters

Yes, 3% of chocolate might be pushing the colour a bit, otherwise I wouldn't change a thing.

Thanks for the feedback. I've altered the grain bill as per your suggestions Dave. I will probably keep the hops the same or maybe just reduce slightly, as I don't really want the malt to 'shine' through as such, just still be noticable under the hops. Cheers.

Looks like a cracking recipe :) I would dial back the ibu's to 30 though as I the dry hopping and late additions will add additional bitterness :)
But then again that's just my taste and I'm sure it will be a cracking pint :)
