Hi all,

I have recently commenced all grain brewing after doing a good few extract brews.

What I would like is for a recipe that will showcase English hops in all their glory as I find that I am kind of stuck in the world of American and new world hops with no real exposure to the likes of fuggles and goldings etc.

Being in Scotland it can prove difficult to get my hands on a lot of the beer that is taken for granted down south.

My base malt is maris otter but I am more than willing to get specialty malts for the recipe along with hops and particular yeast.

Choices are endless really. I think a fullers style recipe using their yeast would go down well :)

Try this for size based on 23l

Pale - 98.5%
Chocolate - 1.5%

Hops:
Fuggles - 35g @ 60mins
Fuggles - 20g @ 10mins
East Kent Goldings - 30g @ 0min
East Kent Goldings - 30g Dry Hop

Should give you a cracking bitter at only 4% ABV, SO4 is a good base yeast for this.

Grain/Sugars:

3.75 kg Maris Otter Malt, 98.5%
0.06 kg Chocolate Malt (British), 1.5%

Hops:

35.00 g Fuggles (AA 3.6%, Whole) 60 min, 15.0 IBU
20.00 g Fuggles (AA 3.6%, Whole) 10 min, 3.1 IBU
30.00 g East Kent Golding (AA 4.7%, Whole) 0 min, 0.0 IBU
30.00 g East Kent Golding (AA 4.7%, Whole) dry hop

I would suggest upping the IBU's by using Target or Magnum for bittering, THEN using Fuggles/EKG at 15 to 0 minutes.

What would be your target ibu? The bitter profile in brewr is 25 to 35.

Yes sorry, my IBU was based on 4.5%AA on the fuggles so looking for about 30-35. You can use Target, but magnum isn't the most English of hops! ;o)

In addition to EKG, First Gold and Northdown are two English hops I really like. Challenger too. London Pride is Target/Challenger/Northdown.

All these hops are used in loads of beers. First Gold, Northdown and Challenger are all mid range alpha acids and dual purpose, can be used at any stage, as single hop or blended with others.

Magnum is very neutral and clean bitterness compared to Target so some people prefer it (not me). I think Target is best.

I usually go for 40 to 50 ibus just because my water is so soft I need to account for it.

For an English style bitter i would chuck challenger in early, goldings in mid, fuggles in the late boil, and dry hop with goldings or fuggles, but i do like sharp hoppy beers......
also crystal and pale malts for a 90 min mash and boil
