Acrid beer...?

Post by rockhopper_123 » Sun Mar 23, 2014 11:55 pm

Hi guys, a question for all you experts.

After making my 2nd all grain batch just over 3 weeks ago the results were very satisfying after 1 week in the keg.

23l batch, 10 bottles and the remainder in the keg.

However I repressurised the keg after feeling it needed a little more pressure, two days later and the beer seems to be developing an acrid taste...?

Is this coincidental or have I introduced a problem ?

Be grateful for any comments and advice.

Do you mean the bitterness has increased? If so, I can see two possibilities:

1. Beer will naturally keep fermenting (very slowly!) during storage and so will use up remaining sugars making it more bitter
2. You've seriously increased carbonation which itself increased perceived bitterness.

Thanks for the comments, I think the taste has taken on a slightly unpleasant taste rather than bitter which makes me wonder if an infection has got in somehow ?

Would you normally expect signs of infection to show right away or could it take several weeks.

I'd be surprised if it showed as quickly as that if it was fine in the first place.
