Frsh Brewer's Yeast

One of my local micros (Keswick Brewing) has said they're happy to supply me with all my brewing ingredients :D and, best of all, that I can use their yeast. :pink: They tell me it's Belhaven brewery yeast.

I just want to be absolutely sure that I treat it with the care it deserves so:
1) Am I right that I should keep it in a sealed container in the fridge?
2) How long should it keep in the fridge? - not that I'll get it long before I need it.
2) Can I pitch it without making up a starter?
3) What volume/weight do I pitch for a 23L brew?
4) Do I remove it from the fridge and bring it to room temperature before pitching?

I thought I might try it out on the Dark Styrian Stunner - what do you reckon? I'll have to get it right 'cos they'll want a taste!

Hello Barrowboy someone i used to work with on an oil platform had a mate he drank with who worked in the Belhaven brewery. I got him to post me some of there yeast it was an excellent yeast. I used mine for about six generations then it started to mutate causing incomplete fermentations.Take a cleaned plastic bottle along with some iodophor inside or similar to collect. Then store in the fridge preferably no more than a week if it's easily available i wouldn't bother with starters & such. I would get a fresh supply a couple of days before brew day. You will be pleasantly surprised fresh brewers yeast goes of like a rocket good find mate.Almost forgot if you have the yeast give wheelers Belhaven 80/- a go it's a great recipe.If you need the recipe give us a shout & i will post good find mate. :D :D

Thanks Rab. I will most certainly do that. You've got me all fired up for it now - can't wait. But I'm going to have to - at least until after next week when I'm away so wouldn't be able to keep an eye on it.
