Citra hops into a modified beer kit..?

Post by Liverpool-Lad » Sun Jun 08, 2014 1:53 pm

Hi folks.

One of my fave beers if youve not tried it is Oakham Citra. Id love to try and make some sort of clone or get somewhere close to the taste.

Ive got 100g pellets on order and Im thinking some kind of blonde kit with extra light dme...what else could you suggest to get near this?

Would 100g be too much to dry hop?

Cheers

I'm planning on doing something similar with a wilco Godlen Ale kit and 50g of citra. 100g may be too much if you don't like a lot of hops, but there's no harm in trying.

Yours sounds like a good plan. Maybe a coopers APA or something would be ideal.

It all depends on how adventurous you want to get.

Here is an all grain clone recipe
Citra

Original Gravity (OG): 1.061 (°P): 15.0
Final Gravity (FG): 1.015 (°P): 3.8
Alcohol (ABV): 5.99 %
Colour (SRM): 9.6 (EBC): 18.8
Bitterness (IBU): 61.0 (Average)

5.5 kg Maris Otter Malt
0.5 kg Wheat Malt
0.2 kg Carapils (Dextrine)
0.15 kg Crystal 120

30g Citra (15% Alpha) @ 60 Minutes (Boil)
20g Citra (15% Alpha) @ 10 Minutes (Boil)
30g Citra (15% Alpha) @ end of boil, steep for 20 mins
20g Citra (15% Alpha) dry hop

Single step Infusion at 66°C for 60 Minutes. Boil for 60 Minutes

Fermented at 20°C with Safale US-05

You could use a Coopers APA
I tin of LME and boil it along with water in the biggest pot you have and add the hop additions.
As the Coopers kit already has about 20 IBU you could use the following hop schedule

20g Citra (15% Alpha) @ 60 Minutes (Boil)
10g Citra (15% Alpha) @ 10 Minutes (Boil)
20g Citra (15% Alpha) @ end of boil, steep for 20 mins
20g Citra (15% Alpha) dry hop

You would also want to mash some Crystal malt & Wheat malt @67c for approximately 30 minutes.
The crystal will add that biscuit malt flavour and the wheat would assist with head retention

100g of crystal & 100g of wheat

I tried to brew a clone of Oakhams Citra bigger brother called Green Devil IPA.

It was amazingly close considering it was a kit adaptation.

IIRC Oakhams Citra is about 4.8% ABV, so you could brew Sundew to 20L with 500g of light DME and follow my hop schedule.

Citra will turn any brew into a tasty drink because it's sooooo good!

Could you elaborate on the boil/steep? Add to boiling water for xx mins and then add everything or strained tea from the mix to the FV? Steep teabag in the boil?

A boil is to boil water and malt be it LME, DME or whole grains and add the hops at the start and at intervals until flame out.... a 60 min boil is generally the norm.

Mashing flavour grains such as crystal malt is to keep the grains in a pot of water @65-70c for the allotted time for the flavours of the grain to infuse with the water.

Steeping of hops is to add hops once the boil is over and you might want to extract flavour rather than bitterness from the hop (citra = grapefruit flavours) so you would add the hops to the boiled brew when you stop boiling for the allotted time.

Thanks, so Im assuming the hops were boiled in just water for xx mins. Flameout then extra hops steeped for xx mins.

Then just the resulting water added to the mix or the hops too?

:)

To extract the hop oils you need sugars in the water, so you would use a tin of LME or a bag of DME in the boil to do that job.

Thanks, so the kit has 2 tins and it was recommended to use 500g pale DME extra

Thanks all. My next concern is the ambient temps being too high! Around 24c at the mo which is a bit too much

I'm currently drinking a Coopers APA with 25g of Apollo on 15 minute boil, 15g on a 20 minute steep and 25g dry hopped.
Its bloody fantastic.
