ok so i thought i would have a little smell and wow did it smell strong, i got a straw to try a little, it taste like a kick ass scrumpy with a little hint of fruitiness, the AJ has killed most of the raspberry syrup off, its slightly fizzy in the DJ is this normal, it does taste really good though, cant wait to do more, this has been fermenting less then a week now and the airlock is still bubbling steadily, gonna leave it another week

It's normal for it to feel a bit fizzy as you say it's still bubbling away. I found mine have always fermented out dry so it would be worthwhile getting in some of your favorite sweetener to back sweeten it a little, just my personal tastes though. I find 2 weeks in the demi about right.

Hey everybody,
I started a 5gal fermentation a while ago (7 bottles of syrup, 2kg white sugar). 27th May to be precise. It started at 1078 and right now it's a little over 1050. The temperature is at 22°C so I know it's at a decent fermentation temperature. It's been 18 days and I'd have thought fermentation would be nearing completion. The FV is sitting on a shelf, in a trug, besides a north-facing window so not in direct sunlight. I pitched a sachet of Gervin GV10 yeast. The fermentation seems to be going at one bubble every 30 seconds.
Any takers? Any help would be greatly appreciated.

FV 2 (5 gallon): Nothing
Commercial: More booze than some local pubs.

When I'm using that much sugar I find it falls out of solution as just sits on the bottom of the demijohn
So what I find helps a great deal is for the first week or so of fermentation is to "rock the baby"
Shake it up so the sugar is moved from the bottom and can be used by the yeasties easier!
I do this early in the process as it will aggravate the sediment and will need time to settle .
The other one is I hope u used a yeast nutrient as in the brew ur doing there's not much in this brew to keep the yeast happy ..... Hope that can help a little

my raspberry TC made with AJ is just about ready, the airlock has just about stopped bubbling, going once every 20-30 seconds, its been almost 2 weeks now anyway, i have had a little taste, very nice, but for me can hardly taste the raspberry as the AJ overpowers it, it just looks like a red colored scrumpy lol, next time im going to use original recipe and try water instead of AJ, maybe 2 bottles of syrup for more flavor, i want to taste the raspberry a bit more, my current brew was 1 bottle of the raspberry syrup and 4.5l of AJ, still good enough to drink for me

Well here's the update and just before bottling note all the "bits" floating on the top.

Decanted into a 2 nd demijohn to stop these getting into my bottles. Tasted just right no sweetner to add , put 1/2 teaspoon of sugar into 500ml bottles and then bottled from 2nd demijohn last picture shows the bottled product. Now to leave for 5 days or so and then try and find a cool place but this time of year nigh on impossible!
OG 1.090. Fg pre bottling 0.998. Think that makes it around 12.3 %. Wow. Get ready !!

I hadn't put in a yeast nutrient as nobody really mentioned it. Chucked in a pot of Wilko yeast nutrient. Now fermenting away happily at ~10 seconds a bubble.second2none wrote:When I'm using that much sugar I find it falls out of solution as just sits on the bottom of the demijohn

Should this taste fine or will sitting on yeast approaching 3 weeks highly affect the taste?
