Sorry to disappoint you all, but the fermentation has been pretty tame, and only got as far as touching the inside of the lid.
I think that a steady 19C has saved me from any cleaning up
@WA - I wanted to brew something as rich in flavour as my Coopers RIS, but without the liver wrenching ABV!
Time will tell if this works out..........

With no sign of any activity in the FV, I have taken a gravity sample on day 8.
It's sitting at 1.016 (5.6% ABV). The sample was very drinkable, so not too sure about keeping this until the winter
I'll give it another 3 days before checking the gravity again, and then plan to rack and gradually chill for a few days before bottling.

No chance to chill in my life matey, with 2 young children in tow!
As my 9L pressure barrel is nearly empty, I'm now planning to keg 9L of this brew for early supping, and the bottle the rest for the winter.

I took another gravity reading last night on day 11, and it had dropped a tiny bit more to 1.015, so should be around 5.8% ABV after a little priming sugar.
I drank the sample again and it was even tastier than 3 days ago. I was a little worried that a toucan stout may be a bit OTT, but this is bang on so far
I'm aiming to keg and bottle on Sunday.

I've got 25 x 500ml bottles for the winter and just over 9L in my mini pressure barrel
Thought that I would just check the keg for pressure, and ended up pouring half a pint!
So drinkable it's unreal.

Not a big fan of the black stuff in pubs - but that looks and sounds damn marvelous MB. Need a bit more practice before I try something 'taxing' (?) like that but looking forward to the challenge.
A 9L pressure barrel also sounds a bit useful. Will have to keep an eye out for one of those.

A pint of what I like to call 'Dirty Stout' served at 15C from my mini pb
Dark vinous fruits, followed by a strong woody bitterness that lingers

Not wishing to turn the forum into something akin to an Emmanuelle novel, but my wife always tells me the Coopers stout has definite aphrodisiac qualities and she was wondering if anyone else has noticed anything similar? With that in mind I was just wondering Monkey if your name 'Dirty Stout' has any significance?
