Single hop smoked stout with centennial

well.... a local micro here made a stout with cascade and it was absolutely foul.

Stout is to my mind about the malt, roastiness and mothfeel. hops are there for bittering purposes only so i use Northowns, target, challenger or similar.

Yeah thats what i've read. This is the grain bill I'm thinking of using:

5.600 kg Maris Otter Malt (76.19%)
0.500 kg Peated Malt (6.8%)
0.350 kg Chocolate (4.76%)
0.350 kg Roasted Barley (4.76%)
0.300 kg Crystal 120 (4.08%)

Again myown personal tast would add some flaked barley and some black malt in there.

Stout grist is generally ok, hopping with centennial.... sorry.

I think the reason i have gone off centennial and cascade beers is they are far too overused.

I love the American C hops haha, cant help not using them! Gonna dry hop with amarillo too

my idea of a stout is this.

61% pale
18 % flaked barley
7.5 % carafa III
4.6% carapils
4% raosted barley
3% black
1.5% chocolate

northdown to 36 IBU at start
Done!
Sits at around 5.5% but having a slightly longer mash helps ( mash at 64-65 too)

brew a small 10 l batch maybe of the one with centennial... not so bad if you need to drain it:)

Thats a porter not a stout though.

If you look at bully porter then there is both cascade and Ahtanum in use but the malt is not as in your face.

A Stout is all about malt.

Ahhhh...... right, that makes more sense then. So its a porter I'm after. Never tried porter but seen a lot people throwing recipes about. I just thought it was a different name for the same thing! haha! cheers

Lots of american stouts use c hops, Sierra Nevada stout is a classic example using cascade, there should be plenty of homebrew recipes out there for it. It's not in your face hoppyness though if that's what you are looking for. Rogue Shakespeare stout is another, that uses all cascade and there was a CYBI recipe for it on the brewing network site


I also prefer the likes of noble hops and british hops for stouts/porters, hallertau and ekg are good

Yeah had a feeling it was going to be more of an American style than a traditional Guinness style. Think I'm in a better place now and have some adjustments to recipe to make, cheers for the advice
