I am still not too sure about hopping .
I have a recipe for Sierra Nevada Pale Ale ( just back from San Francisco and fell in love with it )
The recipe calls for 28gm of Perle at 7.0% AA at 60 mins .
I have Perle at 9.0% so by my calculations I need 22gms (or 21.777 to be exact ) to obtain the same amount of bittering . Is this correct ?
The recipe also calls for 14gm Cascade at 4.0% AA at 15 mins and 21gm at 5 mins for flavouring and finishing respectively .
I have Cascade at 7.9% . Do i have to adjust the weights because of the differing AA% or does the relatively short time in the boil mean that i can use the weights indicated in the original recipe .
I would be very grateful if someone could provide me with a straightforward answer as I tend to "zone out " when confronted with too much jargon and technicality

Perle - correct.
Cascade - 15 minute addition adjust as it will add bittering, 5 minute addition leave as is as this is mostly for flavour.

Wouldn't it be better to leave both Cascade additions as they are, so as not to affect the flavour/aroma, and just further reduce the 60 minute bittering addition to compensate for the higher cascade alpha?

I agree with Sadfield, leave the Cascade additions alone and adjust the Perle.

Tend to agree...adjust the main bittering charge. I find I tend to increase late additional hop charges when following recipes...but that's very subjective and personal
Just like trying new ideas!
