Do have to use this in a fruit wine, as I've run out and don't get paid while next week. Thinking of doing an Elderberry wine

Depends on the fruit.
Elderberry... I /think/, not entirely necessary, but maybe desirable.
Hang on, Google "elderberry pectin content"...
Low in pectin. Should be fine without. I think I put some in my elderberry this year though, on a JIC basis

i made a fair bit of elderberry one suymmer and never used it, came out fine. don't think i've seen it in many elderberry recipes either. though i am very inexperienced on these subjects..
dazzled, doused in gin..
