I just have a couple of thoughts on the recipe. Why 22.7 litres? Are we working in US gallons or litres? I also think that 60 IBUs is too high for an ESB, that's more like IPA territory. I think Fullers ESB is around 35 IBUs.

22.7 litres is 5 imperial gallons. But can't people make the brew length they prefer?

I like the Challenger, First Gold, EKG hop bill suggestion.

I use 22.7L as that seems to be fairly standard for sharing recipes, 75% brew house efficiency seems to be common too. Each brewer would have to adapt the recipe to their setup.

If we brought the IBUs down to 50 we'd be within the style guidelines.

I'm fairly new to creating recipes. Maybe people can suggest some alternate hop combinations with timings and approximate quantities. Then we could do another vote on it?

Of course brew length would be down to individuals' set ups. It was just an observation really. (Thought 22.7L was equivalent to 6 US gallons).

Well yes, 6 US gallons = 5 imperial gallons.

I'd be happy enough with that.

Also OK with leaving out the Fuggles if most people would prefer it.

How about Challenger and Progress. Seymour keeps pushing this combo, and I've a batch almost ready for bottling!

I like Progress as well. In fact I think i have a few in the freezer.

I do need fresh supplies of other stuff before I can make mine though.

Not a bad combo, however I do prefer the Challenger, EKG combination better =D> Its all about personal taste.

I have just found this thread and think its a good idea but lets not be too rigid

I say fix the grain bill as per Jim's ESB above,
We all then have the same backbone that we can work to produce some good alternatives

Give list of 5 Englishhops and each can choose their own combo of 3 max
lets create a list of allowable hops (English) and whittle down to 4 or 5

Choose your own yeast and leave the IBU as between 45 - 55, ABV between 5-6%

There is even some scope to have a vote on the best 4 - final suggestions on paper being entered into a judged competition with the actual ales tested and reviewed.
This could be an annual event.

The recipe looks good!

What about challenger and progress as discussed and then an oz or 2 of EKG as a dry hop? Fullers I am sure dry-hop their esb with goldings. Or just dry hop with the progress.

Also I am in favour of pushing the additions forwards to get more hop flavour and aroma. IE a bit less of the 60 min addition and a bit more of the 30, 10, 0 min additions.

That is not typical of Traditional ESB's though.

I'd drop the torriefied wheat though or Sub it with wheat malt, and ditch the Caramalt, upping the crystal up to 5%. I'd also bring the gravity down to about 1.050 and that would necessitate and IBU reduction to say 40-45.

Hops wise

Challenger for bittering, with 'Goldings' for flavour and aroma, possibly dry hop with Goldings as well.

I'll try and put a recipe together when I get home, but for a rough feel using ByronB's as a base

GRAINBILL
90.0% = 4.360kg, Pale Malt, Maris Otter
5.0% = 0.240kg, Wheat Malt (Thomas Fawcett)
5.0% = 0.240kg, Crystal Malt - 60L (Thomas Fawcett)

MASH at 65-67.0°C

HOPS
30.0g = ??IBUs, Challenger (11.5%), 60.0 min
18.0g = 4.3IBUs, Goldings, East Kent (5.8%), 15 min
28.0g = 4.3IBUs, Goldings, East Kent (5.8%), 0 min (20.0 min steep)
