Brew Number Five : Last Great Eastern Hurrah

Allright, so there's a monsoon outside and I can't even be bothered to go to the pub on my bike because it's so miserable, but in theory its summer soon, July's just round the corner and a brewing break is on the cards. I loved the Great Eastern Cascade, so I'm doing it again, but may change the dry-hop a little this time, we'll see. What I have done though is harvest the White Labs East Coast Ale Yeast from my last brew, the Midas Touch.

The harvested starter has been in the fridge for five days. I took it out this morning and let it sit about to get to room temperature.

This evening I opened the cans of goodness and bashed about the extract in three and a half litres of boiling water with a dash of Campden...

The aeration process got a headstart through making the wort up to 23 litres by pouring in cold water a litre at a time from height with the rest of the half Campden tablet.

Whipped it up a storm for the duration of Mogwai Fear Satan (Mogwai remix) - 9m 49s.

The starter had got pretty lively and had expanded the bottle. I let out the fizz, poured off what remained of the starter 'head'. Did it up again, gave it a good shake.

Found it hard to take an SG as that oasis of calm kept closing up and the hydro kept rushing for the bubblyness, but take my word for it, it was 1040 / 1041 tops.

All done, sitting next to the Midas Touch in secondary, I'm hoping for some big frothy head in the morning. Oh and a good fermentation! Boom boom!

Yeah, I'm looking forward to some yeast action too, here's hoping. This one and the Midas are going to be the first brews going into my two Corni kegs with pub gas, so I want them to ferment out really well. If this yeast works I think liquid yeast and some harvesting could be the way forward - probably would have split that starter over more than one brew if I had any more planned, to be honest.

Yes, I know so many photos could seem a bit self-indulgent, but when I first came to this forum I really appreciated other people's pics.

On a more sensible note I found the great eastern to benefit from an ounce or two of east kent goldings,

I believe Wez has tried something similar with Bramling Cross

Indeed, GEA dry hopped for 5 days with BC was very good

I'm currently drinking one with 40g Cascade. I have more of that, Bramling Cross and First Gold to hand, haven't decided which yet, but I really like the GE.

Got up at six this morning to find the yeasties had got up before me. It's chugging away happily. I'll take more just for Wez when the foam gets more impressive...

Tested this at 1020 yesterday and decided that if this yeast followed the pattern it had with the Midas Touch, a good rousing was probably in order. I'd like to get this down closer to 1010, really. Burping well again today, so I'll test later in the week before moving to secondary.

Transferred this into secondary at lunchtime. Made a bit of a hash up again thanks to the crappy little tap on the primary fermenter which is a smaller aperture than all the others and ends up shooting air through the tubing with the beer and creating bubbles even when you transfer it under the surface. Not good, but hopefully not fatal.

Any point blasting some CO2 into the airspace, or will it just sort itself out over the next week?

Anyway, it's in the secondary fermenter now with a bag of 25g Bramling Cross. I tested it at 1012 from 1042ish. Will leave in it in there in the warm until next weekend, but will hoik the hops a few days earlier than that.
