Hi guys,
I've just done two batches with trusty S-04, and for the first time, they are high in Diacetyl. I know that s-04 is known for this, but what's the best way to tone it down a bit? One batch has been in the bottle for a couple weeks now and I'll be giving it a try to see if the diac. has diminished at all. The other batch is still in the fermenter. With this one, I've moved the fermenter into the house (24C) to let it finish up at a higher temp. It's been in the fermenter for about 8-9 days tho.
My question is: when should the brew be exposed to the warmer temps which they prescribe to reduce diacetyl? After most of the fermentation has finished or earlier?
