Hi there, I've just done my second extract brew following a recipe from the internet (from usa I think) .
It said to boil 3 gallons of water and add malt extract made in the usual way. When done I've only got 12ltrs and the o.g was 1.090.
Is this right?
It's fermenting now

Did the recipe not say to top up the wort with cold water until you reached the 5 gallon mark? (18l if it was a US recipe!)

That seems very odd... all the extract recipe's I've followed have been similar to that one but you add cold water to the FV to reach 20-23l... that would bring your gravity down to the expected level too.
Re: help! 2nd extract brew
Thanks caddarn, I've already topped up with 2 kettle full of cooled boiled water- up to 1.5ltr now. I'll do the same to getup to volume.
If I didn't I think I would be making a barley wine
